Recipe - Tilapia with Pomegranate Mango Salsa

I had seen this recipe on the Hy-Vee website, and when I saw perfectly ripe mangos, I went for it. Since Mark and I pretty much love any recipe that involves cilantro, this one gets an A+ from us. Absolutely delicious!

Tilapia with Pomegranate Mango Salsa

Ingredients
4 (5 to 6 ounces each) tilapia fillets
1/4 cup fresh lime juice
3 cloves garlic, chopped
ground black pepper, to taste
1/2 cup pomegranate seeds
1 cup diced fresh mango
1/2 cup chopped fresh cilantro
1/2 cup diced red onion
2 tbsp lime juice or pomegranate juice
1 to 2 tsp hot sauce, or more, to taste

Preparation

Preheat oven to 350 degrees. Arrange fillets in medium glass baking dish. Rub fillets with lime juice, garlic, and black pepper to taste.

Bake 10 to 12 minutes or until fish flakes easily with a fork.

Meanwhile, for salsa, in medium bowl combine pomegranate seeds, mango, cilantro, onion, lime juice and hot sauce; mix well.

Spoon salsa evenly over baked fillets and serve.
